Macaroni salad


Back home we call this salad "ensalada de coditos." My mom makes it very often and I was kind of craving for that salad so I decided to make it with some alterations. For a non-vegetarian option you can add tuna or ham.  

Ingredients: 
- macaroni 
- peas
- corn 
- cucumber 
- bell pepper 
- carrot 
- a bit of onion 
- 2 or 3 hard-boiled eggs 
- cheddar cheese, or any other cheese you might like
- cream (kermaviili suomeksi) (crema espesa en español) 
- mayonnaise 
- mustard 
- salt, pepper and other spices of choice.



Directions: 

1. Cook the macaroni according to the package instructions. Let it cool down. 

2. Cube all the ingredients, and shred the carrot

 

 3. Mix cream, mayonnaise and mustard



4. Add the macaroni, vegetables, and hard-boiled eggs. Salt and pepper to taste. 

Serve cold and Enjoy!

Around Oulu

Hello guys!

I made another video. And it is in Spanish again. I tried to synch subtitles, but they were all over the place and not with the right timing. I will work on them for next time. However, if you speak Spanish, this is a bit of the city where I leave. What I am showing is a route I take often when I go walking, or by bike, to downtown.

Hummus and veggie wrap



Hello guys!

Hummus is something I've always loved, but never done before. I guess this was because I was never able to find tahini, but today I looked for it and found it. To make it is incredibly easy! Be sure to read the notes.



Ingredients:

- 1 pack/can of chickpeas (I used 230 grams)
- 2 tbsp of tahini
- ½ lime (original recipe requires lemon)
- olive oil
- 1 or 2 garlic cloves
- cumin (optional)
- salt & pepper
- some of the chickpea liquid




Directions:
1. In your food processor/blender mix the tahini, lime*, garlic, and cumin.
2. Add and blend the chickpeas and use oil and the chickpea liquid to adjust it to your desire consistency. Lastly add salt and pepper.**

Notes:
* I actually ended up adding the juice of a whole lime instead of half.
** I used only cumin instead of pepper.

Now for the veggie wrap:  



Ingredients:
- 1 big flour tortilla warm(or whole wheat)
- spinach
- carrots and zucchini shredded
- red cabbage
- sliced cucumber
- sliced avocado
- Our freshly made hummus
- Other vegetables of your choice

 


Directions: 
1. Spread the hummus in your tortilla. 
2. Add spinach and the rest of your veggies. 
3. Fold. I used cling film to ensure it wouldn't unravel from the bottom.

Stuffed mushrooms





On a past post about my weekend, I posted a picture of salmon and stuffed mushrooms. Some people from my Facebook asked me what they had in them. So I recreated the recipe here at home. I must say that they taste much better when they're on the grill!!

Ingredients:

- Mushrooms (jumbo size are best)
- Cream cheese (natural or flavored)
- Bleu cheese (crumbled)
- Small garlic clove
- About a tbsp of Crème fraîche (optional)




Directions:

1. Start by cutting away the ends of the mushrooms and finely chopped these.
2. Mix the chopped ends, with the cream cheese, garlic and bleu cheese.
3. Scoop some of the mixture and add it to the mushroom cap.
4. Grill or cook in the oven.

PB & Berries smoothie





Hello guys!

Today I bring you a mixed berries and peanut butter smoothie. It's one of my favorite. Since I am using frozen berries you don't need ice.

Quick tip:

If you use fresh berries then add some ice to the blender

Serves 1



Ingredients:

- 1 dl of blueberries (frozen)
- 1 dl of raspberries (frozen)
- ½ to 1 tbsp of peanut butter or almond butter
- 1 dl of milk (your choice)
- 1 dl of Bulgarian yogurt (Greek or Turkish work as well)
- Honey or agave syrup. Your choice of sweetener.
- Amaranth (optional)

Directions:

1. Blend all the ingredients and serve!

Sunny day!!

Hello guys!

Today was a lovely sunny day in Oulu! We had over + 23 C, and when you live in a cold country, that is hot! For me it was perfect weather.



My day started at the police station, because I had to turn in some paperwork to renew my residence permit. Since my appointment was in the morning and I was downtown, I decided to have some breakfast in Bisketti, one of my favorite coffee-houses in Oulu.



Afterwards I went to look around downtown and then came home. At home I decided to make a little project. I had an old shirt that I decided to make a beanie. It came out nice. Maybe would be nicer if I had a sewing machine! haha! But it's wearable. I also did a headband-turban thingy.



In the afternoon I went to my sister in law's place where we had a BBQ. They ate salmon, and I had made bleu cheese, cream cheese stuffed mushrooms! They're delish, I must do them again and upload the recipe next time.





Overall has been such a lovely day! I just hope the summer will be like this and not cold and rainy!
